No-Bake Paleo Pumpkin Spice Pie

This Paleo Pumpkin Spice pie is a slice of heaven that will leave your holiday guests feeling amazing  and asking for seconds! It’s packed with all the best of fall flavor: pecans, dates, warming spices like cinnamon and nutmeg, and of course Pumpkin Spice with Collagen for a veggie and protein boost.



For the crust

  • 1 ½ cup pecans

  • 1 cup dates, pitted

  • 2 tbs of instant coffee grounds

  • 2 tbs of cocoa powder

  • 1 tsp vanilla extract

For the filling

  • 1 cup boiling water

  • 1 packet of unflavored gelatin

  • 1 bottle of Pumpkin Spice with Collagen

  • ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ⅓ cup coconut sugar



  • In a food processor, add all the ingredients for the crust and pulse until combined. Press this mixture into the bottom and sides of a pie pan sprayed with cooking spray to form the crust. Set aside.

  • In a mixing bowl, pour boiling water over gelatin and sugar and stir until dissolved

  • Add the bottle of Pumpkin Spice with Collagen and spices and stir.

  • Allow to cool for 10 minutes and then pour the filling mixture into the crust.

  • Freeze for approximately 1-2 hours, until firm. Or place in the refrigerator overnight.

  • Slice and enjoy!
