This Paleo Pumpkin Spice pie is a slice of heaven that will leave your holiday guests feeling amazing — and asking for seconds! It’s packed with all the best of fall flavor: pecans, dates, warming spices like cinnamon and nutmeg, and of course Pumpkin Spice with Collagen for a veggie and protein boost.
INGREDIENTS:
For the crust

1 ½ cup pecans

1 cup dates, pitted
-
2 tbs of instant coffee grounds

2 tbs of cocoa powder
-
1 tsp vanilla extract
For the filling
-
1 cup boiling water
-
1 packet of unflavored gelatin
-
1 bottle of Pumpkin Spice with Collagen
-
½ tsp cinnamon
-
¼ tsp nutmeg
-
⅓ cup coconut sugar
INSTRUCTIONS:

In a food processor, add all the ingredients for the crust and pulse until combined. Press this mixture into the bottom and sides of a pie pan sprayed with cooking spray to form the crust. Set aside.

In a mixing bowl, pour boiling water over gelatin and sugar and stir until dissolved

Add the bottle of Pumpkin Spice with Collagen and spices and stir.

Allow to cool for 10 minutes and then pour the filling mixture into the crust.

Freeze for approximately 1-2 hours, until firm. Or place in the refrigerator overnight.
